This recipe is really easy to make. This bacon dish is really good if you eat it with a medium-bodied red wine.
Caprese Chicken with Bacon
8 bacon strips
4 boneless skinless chicken breast halves (6 ounces each)
1 tablespoon olive oil
1/4 teaspoon pepper
1/2 teaspoon salt
2 plum tomatoes, sliced
4 slices part-skim mozzarella cheese
6 fresh basil leaves, thinly sliced
How to Make:
Prepare an ungreased 15-in. x 10-in. x 1-in. baking pan. Place the bacon in it. Bake at 400° for approximately 8-10 minutes or until the bacon is partially cooked but not crisp. Place chicken in an ungreased 13-in. x 9-in. baking pan; brush the chicken with oil and sprinkle with pepper and salt. Top the chicken with tomatoes and basil. Wrap each in two bacon strips, arranging bacon in a crisscross.
Bake, uncovered, at 400° for approximately 20-25 minutes or until a meat thermometer reads 170°. Add the cheese on top of it; bake until 1 minute or until it melted.
